Bột mì, tinh bột bắp đem rây mịn. Thêm 25g đường bột vào tô trộn đều. Thêm từ từ 240ml sữa vào khuấy cho hỗn hợp mịn. Thêm trứng vào trộn nhẹ tay. 50g bơ lạt cho vào lò vi sóng trong 30 giây cho tan chảy. Thêm vào trộn đều. Lược hỗn hợp qua rây. Bắt chảo lên bếp (dùng chảo không dính), thêm 1 muỗng hỗn hợp bột vào chảo, lắc tròn để tạo thành hình tròn mỏng. Chiên nhỏ lửa cho chín đều rồi vớt. làm tương tự cho hết liệu. Trái cây cắt miếng vuông nhỏ vừa kích thước cái bánh.
Cho 1/2 muỗng cà phê vani, 300g kem whipping, 5g đường bột vào thố đánh cho bông cứng. Trải bánh crepe lên mặt phẳng, thêm ít kem vào giữa, đặt 1 miếng xoài lên, bọc từ 4 mặt thành dạng gối, gấp lại. Làm lần lượt hết nguyên liệu rồi cho bánh vào ngăn mát tủ lạnh khoảng 30 phút là có thể dùng.
